Virtual Parkdale Food Centre Fork Off

Join Parkdale Food Centre’s Resident Chef, Anna March, on Sunday, October 31, 2pm on WWBIA’s Facebook page, as she prepares a pre-Hallowe’en feast: Spooky black bean nachos and guacamo-oo-oo-le!

Most of these ingredients can be found at Marché Hintonburg Market, GTExpress, Herb and Spice Shop, and Metro.

What you’ll need:

1 bag salted tortilla chips
1 can black beans
½ cup corn kernels
2 cups shredded Monterrey jack
Sour cream
Salt and pepper 

For the salsa:

¼ red onion, sliced
1 pepper diced ( optional )
2 ripe vine tomato, seeded and diced
1 lime juice and zest

For the tomatillo:

1 cup tomatillos canned or fresh
¼ cup chopped green onion
2 cloves of garlic
1 jalapeno ( seeded and ribbed if you want less spicy)
1 large bunch of cilantro
1 lime juice and zest

For the guac:

2 ripe avocados
1 lime juice
1 tsp cumin

Have your ingredients ready for 2:00 pm and Chef Anna will walk you through the preparation step by step—and you’ll have your family fed well ahead of trick or treating time!

Directions:

  1. Open and rinse the beans, grate the cheese, and set aside.
  2. For the salsa, chop and seed the tomatoes, and combine with the diced pepper, lime juice and zest and season to taste with salt and pepper. 
  3. For the tomatillo salsa, place a cast iron skillet over medium heat. Cut the tomatillos in half and char them cut side down. When lightly charred- add the green onion, the garlic and the jalapeno to the pan. Char those items too!
  4. Place the charred items in a food processor with the cilantro and lime and pulse the mixture until it is a pourable consistency. Season with salt and pepper.
  5. Place  a layer of corn chips on a baking sheet and sprinkle with half the corn, cheese, and beans. Add another layer of toppings and bake at 375F for 10-15 minutes or under the broiler until golden brown and the cheese is melty.
  6. Open and seed the avocados and mash them with a fork. Add in the lime, cumin, salt and pepper. Adjust the seasoning as desired and serve the guac with the salsa and sour cream on the side .
